Delicious Fresh Strawberry Pie {Recipe}

I love strawberries. ESPECIALLY fresh strawberries. The kind that I pick myself. I think that there are many great reasons to go to your local strawberry patch. I recently visited Washington Farms in Loganville, GA. When I come here, I pick a MASSIVE amounts of strawberries… then I come and make this absolutely SCRUMPTIOUS pie!!!



  • Pre-baked pie crust {or, your favorite homemade recipe}. If you are going with the pre-baked store-bought kind, steer clear from using the graham cracker version.
  • 1 – 1 1/2 qt. fresh strawberries with the caps cut off
  • 1 cup sugar
  • 3 tbsp corn starch
  • 1/2 cup water
  • 1 8oz package of cream cheese {softened}


  • Prepare the pie crust as directed.
  • Crush up or blend enough strawberries to make 1 cup. I use my Ninja to do this super easy and quick!
  • In a sauce pan, mix the corn starch and sugar.
  • Slowly add the water and the strawberries. Stir.
  • Turn your heat on medium. Stir constantly until the mixture boils. You will see a noticeable difference in your strawberry sauce when it is ready.
  • Once it is boiling, let it boil for 1 minute. Then take it off the heat.
  • Softly press the softened cream cheese into the bottom of the pie crust.
  • Put your remaining strawberries on top of the cream cheese.
  • Pour the strawberry sauce over the fresh strawberries.
  • Put it in the fridge for at least 3 hours before serving.
