There are so many reasons that it’s great to be back in Georgia.  Closer proximity to some of our favorite attractions, a gorgeous house located really close to Darren’s work, and delicious restaurants and food surrounding us wherever we go.  However, the absolute best thing about being here is that we’re about an hour from most of our friends and family.  That is far, far better than the five hours that separated us previously.

It’s left me creating a handy stack of dinner party recipes that I can easily whip up whenever we make plans with those we love.  Just like all of you, I am super busy all the time.  Between navigating our first year of homeschool, this blog, and keeping our house clean and functioning, I sometimes feel like I am in overload.  That’s why I need easy dinner ideas that I can make in a flash and that everyone will love.

Enter Rich’s SeaPak Spring Rolls.  These tasty spring rolls were actually named one of “The 15 Best Frozen Appetizers to Serve at a Party” by Ladies Home Journal.  I’ll admit… that definitely peeked my interest.  I had to see why these spring rolls stood out from the sea of frozen appetizer options we are flooded with {sorry for the bad puns… really.  I didn’t even notice how bad they were until later… and then I kind of liked it, so I just left it}.

The Rich’s SeaPak Spring Rolls are located in the freezer case near the other frozen seafood options at Walmart.  They come sixteen to a package and are so easy to prepare.  I simply preheated my oven to 450 degrees, placed them on my Siplat, and cooked for 13 minutes.  It doesn’t get any easier than that!

Now, the spring rolls come with several packages of a shrimp dipping sauce, but I wanted to whip up something else.  I don’t tend to enjoy the traditional red dipping sauce that comes with shrimp, but I do love a good ginger sauce.  So, while the Rich’s SeaPak Spring Rolls were in the oven, I decided to whip up a batch.

It’s so easy and really tasty.  It’s perfect for these spring rolls as well as other types of seafood.  It also makes a really awesome salad dressing.

Ginger Dipping Sauce

Ingredients:

  • 1/4 cup sweet onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp. fresh ginger root, minced
  • 2 tbsp. fresh squeezed lemon juice
  • 1/4 cup soy sauce
  • 1/4 tsp. white sugar
  • 1/4 tsp. white distilled vinegar

Combine all ingredients in a blender.  Puree until smooth.

Y’all– these spring rolls came out perfect.  They have the ideal amount of crispy crunch on the outside and are filled with tasty shrimp and veggies.  It’s great for healthy quick dinners or to serve as an appetizer whenever our friends and family come to visit.  We’ve got several parties coming up as well, and the Rich’s SeaPak Spring Rolls would be a great thing to take.  You just may want to pick up a few boxes– I guarantee they will go quick!
