I have this habit of bringing my daughter along wherever we go.  She’s my little mini-me– my best friend– and I like to have her with me.  As a parent, I know it’s a good thing to enjoy spending time with your child.  However, I have to remind myself to take a step back and make time to spend alone with my husband as well.  You’ve got to invest time into your family, but you’ve also got to invest time into your marriage to keep your family strong.  A date night is the perfect way to spend time together and enjoy a meal and conversation completely uninterrupted.

With Valentine’s Day, just around the corner, I’ve been thinking of some fun date night ideas that would be easy for this busy mama to plan, but still fun for us to do together.

  • Bookstore Date Night—  I have to admit that this is one of my favorite date nights.  My entire family could spend hours at the bookstore on any given day.  We’ll pick up a magazine or a new humor book, and share a table in the bookstore cafe as we look over our selections.  I have to admit– my bookstore has the most amazing selection of baked goods and drinks, so there’s usually some coffee cake and hot chocolate or a smoothie on the table as well.  We’ll talk about what we’re reading, munch on snacks, and just enjoy a relaxed evening together.
  • Dinner and a Movie— This traditional date night is still one of my favorite, go-to options.  Usually when we head to the movies, it’s to see the latest animated feature.  So, it’s nice to see something with real people in it for a change.  It’s also wonderful to choose any restaurant we want for dinner.  With a picky vegetarian daughter, our options are usually severely limited.
  • A Day of Hiking— Sometimes, our date “night” takes place during the day!  Our family loves to get into the woods, hike and enjoy the beautiful scenery we’re surrounded with.  Raileigh often comes along, but when it’s just Darren and I, we can cover more ground and tackle more strenuous trails.  Of course, I always bring along a picnic because there is no better way to end a nice day of trails than with a delicious meal outdoors.
  • Date Night In— While I do enjoy all the date nights listed above, most of our date nights actually take place at home.  I’ll cook us something yummy to eat {and usually whip up some kind of dessert as well} and pick out a new release on Netflix to watch together.  We’ll cuddle under our favorite soft blanket on the couch and enjoy a relaxing evening in the comfort of our own living room.

This last date night is what inspired me to create a Valentine Date Night Gift for some of my friends who have recently given birth to their first little one!  For many new mothers, it’s hard to carve out that time to spend alone with your spouse.  Not to mention, soon after you give birth, you don’t usually feel great about your new post-baby body.  You’re figuring out how to manage a new time schedule, and that usually only involves things you must do to keep the household running, and not things you would like to do.

So, I decided to head to Walmart and create a Valentine Date Night Gift that will encourage them to take time out for their spouse without leaving the house.

But, since it’s a gift and I really wanted to pamper my new mom friend, I decided to add in a few additional things.  I am of the firm opinion you can never have too many comfy blankets, so I added in a large. soft blanket that will easily accommodate two people.  Plus, I whipped up a batch of festive Pink Velvet Cupcakes.  They’re moist, delicious, and the color is perfect for a night full of love.

Pink Velvet Cupcakes


  • 1/2 cup Crisco shortening
  • 1 1/2 cups granulated sugar
  • 2 tsp. unsweetened cocoa powder
  • bottle of McCormick’s Neon Pink Food Coloring
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup buttermilk
  • 2 tsp. baking soda
  • 1 tbsp. white vinegar
  • Batch of Cream Cheese Frosting

Begin by preheating the oven to 350 degrees.  Either spray your cupcake pan or put cupcake liners into the cavities.  Set aside.

Add your shortening and sugar to a large bowl.  Beat until well combined.  If you’re using a stand mixer, the paddle attachment makes this very easy to do.  Add the cocoa powder, food coloring and eggs, continuing to mix the ingredients together.  When it comes to the food coloring, I used almost an entire bottle of the food coloring.  Use the amount you desire to achieve the tone of pink you like best.

Next, add in the flour and buttermilk.  Mix slowly at first so that a giant cloud of white powder doesn’t go all over your kitchen.  You can turn the speed up once it begins to mix in with the other ingredients.  Add in the baking powder and white vinegar, carefully folding in the cupcake mix until just incorporated.  Do not over mix!

Add your batter into your cupcake pan and bake for approximately 20 minutes.

When the cupcakes have cooled, you can frost them with a delicious batch of Cream Cheese Frosting.  This whips up in a matter of minutes, so you can just prepare it when you’re ready to frost.  I added some tiny heart sprinkles to make them even more festive.

There you have it– an intimate #KYdatenight for a new mom that requires very little effort for her, yet will allow her to have an amazing evening in with the one she loves.
