If you would have told me a few years ago that I would enjoy eating broccoli, I would have laughed at you. However, at the beginning of the year, in an effort to add more healthy foods to my diet, I gave it a try. I completely and utterly fell in love with broccoli. It quickly ousted zucchini as my favorite vegetable and I began to serve it as often as possible. We’re talking at least four times per week.
Generally, the way I prepare broccoli doesn’t vary that much. Sometimes I’ll steam it and sometimes I’ll sautee it in a little olive oil. However, my husband has let me know on more than one occasion that while he likes broccoli, he’s just not as big of a fan as I am. Not that anyone is, really.
So, I began to try and think of new ways I could incorporate broccoli into our meals other than the standard side dish.
That’s where this sandwich comes in. The Broccoli & Cheese Open Face Sandwich incorporates my favorite veggie sauteed in a little STAR olive oil, some freshly sliced cheddar cheese, and some lightly toasted bread. It. Is. Amazing. It’s light yet filling, and a delicious take on an old favorite.
I first made this sandwich for lunch one day, completely leery of what my husband would think of it. Quite honestly, I figured I would be eating his sandwich as well. To my complete surprise, he really enjoyed it… and even said we should definitely eat it again.
Of course, I had to share the recipe with all of you!
Open Face Broccoli & Cheese Sandwich
- Half a Bunch of Fresh Broccoli, crowns removed and chopped
- 2-3 tbsp. STAR Arbequina Olive Oil
- 4 slices of Cheddar Cheese
- 2 pieces of Bread
- Optional: butter to spread on the bread
Start by preheating your oven to 350 degrees. Add the broccoli and oil to a pan. Sautee over medium heat for approximately 10 minutes.
Meanwhile, butter the bread and lightly toast it in the oven. Add two slices of cheese to each piece of bread and return to the oven for a few moments. Remove it once the cheese starts to melt.
Take the bread from the oven and put a generous pile of broccoli on top.
That’s it. Now eat and enjoy.
