Gingerbread M&M Cookies

Makes 6 Dozen {You can easily cut this recipe in half if you want to make less}

  • 1 cup Butter Flavored CRISCO (no substitutes)
  • 1 cup granulated sugar
  • 1 cup firmly packed light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups unsifted flour
  • 2 cups Gingerbread M&M’s

Preheat oven to 375º F. Use a mixer to cream the Crisco, sugar, and light brown sugar.  Be careful not to over-cream.  Add eggs, vanilla, salt and baking soda. Blend well with mixer.  Gradually add the flour, stirring it in by hand.  Fold in the Gingerbread M&M’s.

I always refrigerate the dough for about half an hour before baking.  This helps with the cookies spreading.

Form dough into balls that are roughly an inch in diameter.  Bake about 7 to 9 minutes until lightly browned—–mostly around the edges. Center will still be soft. Let sit on pan for a minute or 2 before carefully transferring to a cooling rack.

That’s it!  You’ve got a delicious batch of irresistible Gingerbread M&M’s Cookies.  They store rather well… not that they will last very long!
