Y’all– I absolutely love to cook.  There are so many reasons that I prefer to provide my family with a fresh, home cooked meal every night.

  • The cost is less.  My husband and I have figured that out that we can prepare virtually anything at home and it costs less than going out to eat– even fast food.
  • It’s healthier.  Because I can control the ingredients that go into our meals, I can assure that my family eats within the recommended guidelines and that we are using quality, healthy ingredients in our meals.
  • It’s fun.  You may not agree, but I find cooking to be really fun.  Once I stopped seeing cooking as a chore, I began to enjoy having the opportunity to cook for my family.  Plus, there’s something about taking a bunch of ingredients and turning it into a meal that my family loves that is extremely satisfying.
  • It promotes togetherness.  This is by far my favorite reason for cooking dinner for my family.  When we sit around the table eating dinner together, we have the chance to talk, share stories, communicate, and bond.  It’s an experience that I would never trade.

With all that being said, it is downright hard to get that meal on the table each night.  I homeschool my daughter, run my home, and spend many hours each and every week working on Wee Share.  And that’s just the tip of the iceberg.

Planning out our weekly meal calendar is incredibly time consuming, yet necessary.  I like to make a list of what meals we’ll be having and what ingredients I need to purchase.  This drastically reduces our grocery bill because I buy exactly what we need and don’t have to guess when I’m at the store.

The problem is, as I mentioned, that it takes up a ridiculous amount of time.  Time that I simply don’t have.

The cool part, though, is that you can change up your meal plan once a month.  Say you want to try low carb or paleo for a while, then you can!  If you’re stuck in a cooking rut, then you can change up the plan you’re using.

Every week, your weekly meal plan arrives in your inbox.  Each day is laid out for you, with and entree and sides.  The day that it arrives seems to line up with the start of the new sale at your grocery store of choice.  That’s because in addition to your meal plan, there is a printable shopping list specific to your grocery store.

Savory Chicken Stroganoff with Sautéed Zucchini and Warm Biscuits

Ingredients for Savory Chicken Stroganoff

  • 1½ lb boneless, skinless chicken thighs {I substituted chicken breasts}
  • 14 oz can beef broth
  • 1 packet onion soup mix
  • 4 oz can sliced mushrooms
  • 3 tablespoons flour
  • 12 oz. egg noodles, uncooked

Puree broth, soup mix, can of mushrooms with liquid and flour in blender. Pour over chicken in 6 to 7 quart slow cooker. Cook on low 4 hours.  Stir the chicken and sauce before serving; break chicken into smaller pieces. Cook noodles according to package directions; drain. Serve chicken and sauce over hot noodles.

Ingredients for Sauteed Zucchini

  • 1 tablespoon olive oil
  • 1 lb zucchini, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano

Heat oil in a skillet over medium-high heat; add zucchini. Cook, stirring occasionally, until zucchini is golden brown – 10 to 12 minutes. Stir in garlic, oregano and salt and pepper to taste; cook, stirring, about 2 minutes.

Ingredients for Warm Biscuits

  • 1 can biscuits

Prepare biscuits according to package directions.
