Milky Way Cupcakes {Recipe}

If there is one thing my daughter always begs to make, it’s cupcakes.

These cupcakes feature the flavors we’ve grown to love in a Milky Way– chocolate and caramel.  I used a moist chocolate fudge cupcake for the chocolate and whipped up some caramel frosting to top that off.  Of course, we’ve got some actual Milky Way candy bars thrown in, too… because you can’t make an awesome Milky Way Cupcake without them!

I have to say that I think these are hands down the best cupcakes I have ever made.  I even had several people tell me that these were the best cupcakes they’ve ever eaten.  That seriously made me want to make them again instantly.

I recommend using Milky Way Bites.  Since they come unwrapped, it will cut your prep time down considerably.  Plus, I’ve got an awesome high-dollar coupon available for the all-new Mars Bites {there’s a Snickers variety available as well}.  Download the coupon HERE.

Warning:  Don’t open the bag before it’s time to bake.  Your Milky Way Bites won’t last until it’s time to make the cupcakes.  Or… you could just buy a few bags!  That’s probably a better idea.

Milky Way Cupcakes

Ingredients:

  • 1 box chocolate fudge cake mix and all ingredients it requires
  • 24 Milky Way Bites
  • 2 sticks of unsalted butter {at room temperature}
  • 1/2 cup shortening
  • 2 tsp. vanilla extract
  • 2/3 cup caramel syrup
  • 1/4 tsp. salt
  • 1 lb. powdered sugar

A few hours before you’re ready to bake, put your Milky Way Bites in the freezer.  We’ll need them to be nice and frozen before baking.

When it’s time to bake, preheat your oven according to the cake mix instructions.  Then, prepare your cake mix according to the instructions.  Spray a cupcake pan generously with non-stick cooking spray or fill with cupcake liners.  Fill each cupcake cavity slightly less than halfway with batter.  Add one of your frozen Milky Way Bites right in the middle.  Add more batter on top until you’ve filled each cupcake cavity 2/3 of the way full.  Bake according to the cake mix instructions.

Cool cupcakes completely.

Now it’s time to create the yummy caramel frosting.  You’ll start by creaming the butter and shortening together.  I did this using my stand mixer fitted with the whisk attachment.  Add the vanilla extract, caramel syrup, and salt.  Mix until combined.  Slowly begin adding the sugar, mixing it in as you go.  The frosting will begin to thicken up and take shape.

After all the sugar has been added, decide if your frosting is the consistency you desire.  If you want thicker frosting, add more powdered sugar.  Just do so s-l-o-w-l-y and taste after each addition.  You can always add more, but you can’t take any back!

Also check the flavor.  If you desire even more of a caramel flavor, add a little more caramel syrup.

Frost your cupcakes!  You may choose to add caramel drizzle with additional syrup as well as some chopped up Milky Way Bites to the top for additional goodness.  I did… and I recommend it!

There you have it!
