Living in Atlanta, we have access to some really good food. From diners that have been around for a hundred years to restaurants that were opened by world-renowned chefs, there is truly something for everyone.
One thing we don’t have is really fresh seafood. Just moving from the coast of South Carolina, this is something I really miss. We would often visit local spots where we could watch the catch being brought in each day. It was wonderful.
I can’t exactly bring my favorite seafood spots here to Georgia. BUT… I can try and recreate my favorite dishes here at home.
That’s where Land O’ Lakes Sauté Express® Sauté Starter comes in. This delicious new product, found in the dairy aisle, comes in five different varieties:
- Savory Butter and Olive Oil
- Italian Herb
- Garlic and Herb
- Lemon Pepper
Don’t they all sound so incredibly yummy?
I decided to take the Garlic and Herb Sauté Express® Sauté Starter and recreate one of Darren’s absolute favorite seafood dishes– Shrimp Scampi.
I decided to take the basic shrimp scampi dish he loves and take it up a notch. I added some of our favorite veggies for a little extra flavor and color. The Land O’ Lakes Sauté Express® Sauté Starter makes this dish easier than ever. It whips up in less than half an hours– including chopping up the vegetables!
Garlic & Herb Shrimp Scampi
- 1 lb. medium shrimp, detailed and deveined
- Garlic & Herb Land O’ Lakes Sauté Express® Sauté Starter
- Linguine, Fettucini, or Spaghetti Noodles
- Assorted Vegetables– I used squash, zucchini, and broccoli
Start by turning your water for the pasta on to boil. Then, chop up your veggies. For the squash and zucchini, I cut them into “stalks”– long, relatively narrow pieces. I also took the broccoli crowns and cut them into significantly smaller broccoli pieces. The broccoli tends to cook slower than the other two veggies, so the pieces must be smaller to ensure they are all done at the same time.
Now it’s time to start the shrimp and veggies. Take one Sauté Express® Sauté Starter square and melt it in one pan. Melt an additional square in another pan. You’ll add the veggies to one pan and the shrimp to the other.
Whenever your water boils, don’t forget to add your pasta!
In the meantime, continue to stir both your veggies and shrimp. I cooked over medium heat and it took each about 10 minutes to cook.
When your pasta is finished, drain the water and return the cooked pasta to the pot. You MAY choose to add an additional Sauté Express® Sauté Starter square to the cooked noodles. Add the shrimp and veggies– including the cooking sauce in the pan– into the pot with the pasta.
Stir well! That’s it. A super tasty dish that completely hits the spot.
Thanks to Land O’ Lakes Sauté Express® Sauté Starter this dish is easier to make than ever. I have about a zillion more dinner ideas up my sleeve that use this fantastic new product. I cannot wait to try all five varieties.
