It’s fall– my absolute favorite time of the year.  While that most certainly means cooler weather and falling leaves, it also means FOOTBALL!  In the South, football is huge.  As in– plan your schedules around the time your team plays.  Count on establishments to be empty when the local team plays because everyone will be watching the game.

Football season means time to develop new football snacks… because you most certainly cannot watch the big game on an empty stomach.  Then, where would you get the energy to cheer and yell at the refs?

Meet my Buffalo Chicken Dip Poppers.  These little guys may be cute, but they certainly pack a punch thanks to the star ingredient- Tyson Buffalo Chicken Tenders.  They’re simple to make {only 5 ingredients} and are incredibly delicious.  The best part is that they are the perfect poppable finger food, making them a great option for watching games at home or tailgating outside the stadium.

Want to make some?  Let’s get started.

Buffalo Chicken Dip Poppers

  • 4- Tyson Buffalo Tenders
  • 8 oz. Shredded Monterey Jack cheese
  • 8 oz. cream cheese
  • Ranch Dressing
  • Scoop Tortilla Chips {you know… the ones that look like little bowls}

Start by preheating your oven to 400 and cook the Tyson Buffalo Tenders according to the package directions.

While your chicken cooks, take out an 8″ x 8″ baking dish and spray it well.  Soften your cream cheese {I opted for 30 seconds in the microwave} and spread it as evenly as possible along the bottom of the baking dish.

When the chicken is done cooking, remove it from the oven and instantly turn the temperature down to 350 {this is the temperature you’ll cook the dip at}.  You’ll need to shred your chicken really well.  This can be done with a few forks, but I opted to use my stand mixer.  I placed the four tenders into the mixing bowl and fitted the mixer with the paddle attachment.  Medium speed for about a minute produced perfectly shredded chicken.  Keep an eye on it, though– shredding too long can result in something more like chicken dust {not that I know from experience…}.

Layer your shredded chicken on top of the cream cheese in the 8″ x 8″ pan.  Next, drizzle ranch dressing on top of your shredded chicken.  I did a rather generous drizzle.  Top this layer with 8 oz. of shredded Monterey Jack cheese.  Place the baking dish in the oven and cook uncovered for 20-22 minutes.  Cheese should appear melty and bubbly.

This is what your dip will look like when it’s removed from the oven.  Yes— you most certainly can go ahead and eat it right now.  But, with one more simple step you’ll have Buffalo Chicken Dip POPPERS.  By turning the dip into a finger food, it’s easier to eat and easier to manage while watching football.

Lay out some of the scoop tortilla chips.  Try to choose ones that really have that “bowl” shape and aren’t broken.  Then, using a normal household spoon, fill each “bowl” with dip.

You’re done!  The Buffalo Chicken Dip Poppers are ready to consume.

This recipe is incredibly easy and so, so tasty.  By using the Tyson Buffalo Tenders, you’ve got perfectly seasoned buffalo chicken that creates the perfect football food.

If you’re interested in getting even more fun ways to incorporate the tenders into your tailgating recipes, I encourage you to head to Sam’s Club on October 5.  From 11am- 2pm at stores nationwide, there will be Tyson samples as well as tables set up for finger football with referees.  The first 200 people that attend the demo get a free Finger Football take home kit!   I also heard about a cool new app that you can use on your smart phone while at the demo to enhance the Finger Football experience!  Should be fun!
