Darren has a relatively odd schedule.  He never works 9-5, he seldom has weekends off, and a few nights per week he has to work late.  In all honesty, I don’t mind his schedule.  It gives us family time during non-peak hours, meaning that when we go places, it tends to be less crowded.

On the nights he works late, it does make dinner time more difficult.  After all, I love meat and my daughter tends to stay away from it.  So, I often feel like I am fixing dinner for a single person.

That’s why I love Tyson.

Their delicious chicken is easy to cook, tasty to eat, and perfect for nights when I do dinner without my husband.  I can pick up a bag at Sam’s Club and have enough chicken to last me many meals.  Plus, since it’s versatile and can be used in a variety of ways, I don’t feel like I am eating the same meal over and over again.

Lately, my favorite thing to make is Chicken Parmesan Sandwiches.  What?  You’ve never had chicken parmesan in a sandwich before?  You’re totally missing out!  And– it’s time to remedy that.  The recipe is about as easy as you’ll find and can easily be customized with your favorite bread, cheeses, and spaghetti sauce.

Chicken Parmesan Sandwiches


  • Tyson Chicken Nuggets {I only needed about 3, but I cooked more just to nosh on}
  • Spaghetti Sauce
  • Freshly grated Parmesan cheese
  • Buns or rolls

Begin by preheating your over to 400, as recommended in the directions on the Tyson Chicken Nuggets packaging.  I like to cook my nuggets on my Silpat for easy clean-up.  You can use a pan lined with aluminum foil and lightly coated in cooking spray.

The nuggets cook for 11 to 13 minutes.  I did mine for 12.  While they cook, you can get the rest of your ingredients ready.  For the sauce, I used some homemade spaghetti sauce I had whipped up a few nights before.  It’s awesome and easy, if you’re interested.  If not, any spaghetti sauce will do.  If you like the jarred variety, Prego Meat Sauce always goes over well in my house.

I went ahead and shredded my Parmesan cheese while the nuggets cooked as well.  There is no set amount– just however much you think looks good.

For buns, I used some hamburger buns leftover from BBQ earlier in the week.  I think that Chicken Parmesan Sandwiches would be especially good on Hawaiian Rolls, but I just used what I had on hand.

One the nuggets are done, it’s time to assemble the sandwich.  Open the bun or roll and place a layer of nuggets inside.  Top that with sauce and cheese and you’re good to go.

This sandwich is definitely messy, but oh so good.  As the weather starts cooling off, this is the perfect easy meal to have on hand.
