With summer in full swing, everyone wants a body they can feel comfortable in. What better way to do that than eating healthy and working out? The summer is filled with opportunities to get active- swimming, biking, hiking and beach volleyball to name a few. For me, it is much easier to eat healthy in the summer. With hot weather and active days I even find myself craving healthy food! When I received word that Wee Share was selected to be on the Weight Watchers Cheese Blog Tour I was beyond thrilled!
We were sent Weight Watchers Jalapeno Pepper Wedges, Pepper Jack Singles, Reduced Fat Whipped Cream Cheese Spread with Chive and Onion and Whipped Strawberry Cream Cheese Spread to review. My favorites were the cream cheeses- strawberry on a bagel and chive and onion used in a few recipes. YUM!
I also really enjoyed the jalapeno cheese wedges. I picked up a box of pita crisps and several of those with a wedge made for a perfect afternoon snack! The jalapeno was not too powerful, but just the right kick to create a wonderful flavor. The pepper jack singles were a bit spicy for my family, but I enjoyed them. We don’t eat a lot of spicy since my husband and oldest are very sensitive to spicy foods. I did receive coupons so that I could try various Weight Watchers Cheese sold in stores around me. I picked up a bag of light string cheese and with only 50 calories these have become my favorite before dinner munchie!
This year we have our first garden chugging along, but since we haven’t started producing many veggies yet my grandfather has been sharing. He lives alone, but has a garden big enough for the whole neighborhood. Needless to say we have been very blessed with fresh veggies this year. Have a look at the zucchini he sent home with me a few days ago:
With our hodge podge of veggies I decided to throw together a pasta dish and use the chive and onion cream cheese from Weight Watchers as a sauce of sorts. I would like to share the recipe with you guys and feel free to use whatever veggies you have on hand and omit the chicken if you don’t have any! I love this recipe since it is so light and yummy with simple ingredients.
Garden Fresh Pasta:
– 1 box of penne
– 1 container of Weight Watchers Whipped Cream Cheese with Chives and Onion
– Zucchini (chopped)
– Tomatoes (diced)
– Green bell pepper (chopped)
– Mushrooms (chopped) – Boneless chicken breast
– 1/4 cup chicken broth
1. Cook chicken in a 3 quart saute pan
2. Remove the chicken and dice it up into bite size pieces
3. Add the cream cheese and chicken broth to the pan and whisk together over medium heat
4. Add your veggies and chicken and cook covered over medium for 10 minutes
Serve over penne and enjoy!!
